Bacon Cure (Assumes 20lbs Pork belly aka 2 slabs)
- 4 cups Fresh Ground Coffee (Dark Roast)
- 1 Cup Barrel Aged Maple Syrup
- 1 Cup Brown Sugar
- 1 Cup Kosher Salt (Coarse Ground, shouldn’t matter)
- 2 tsp Pink Curing Salt (Prague Powder)

This recipe actually came out very subtle and bit caffeinated potentially (I felt jumpy eating it, or its my heart stopping from so much fat). I would tweak this to be finer ground roasted coffee as bits were stuck in the bacon. Overall subtle flavor.
