
Ok so admittedly I have been doing a piss poor job of brewing in the last few months. I attribute most of this to the ex and more of this to i had a huge stockpile from 2012 that had to be drank… Drink we did!
Happy New Year to everyone! I started off the year by doing a double header last night with my cousin. He isn’t quite of age yet but in anticipation of his 21st he highly intends on practicing the craft and trying beers. Good to see the younger generation having bright futures full of awesome goals!
Ok, down to business. I started the brew session with a very lightly bittered Southern English Brown ale. This emphasizes more of a malty creamy finish rather than a bittered stout. I used a combination of Chocolate Malt, Crystal 60L and some cara pils, 2-row (of course) and 8oz of malto dextrin! just for a slight bittering I went with 1oz of Fuggle based on an AHS recipe. All of this topped off with WLP005 British Ale yeast, which i’ve used before with great results. I hope this ends up being similar to my hybrid but the hybrid was based on a kit so who knows. This is very close to the AHS kit for southern brown, but I lack the quantities from their recipe to compare. Experiments in my future perhaps. It was a nice dark brew and I was able to FINALLY try out my wort chiller I made earlier in the year. Worked like a charm from the convience of my condo’s bathroom faucet (bathroom brew doesnt normally come out this good 😉
