
Tonight was the much anticipated bottling of my Hefeweizen! I was able to ferment this at a solid 71. Its on the higher end of the fermentation range for my yeast, but it did exactly what i wanted it to. It had some really fantastic Banana hints with minimal clove. The bittering was so subtle that its gonna be a really solid beer once its carb’ed up and bottle conditioned.
The fun thing about these simple recipes I’ve been doing is that you can really taste the core ingrediants. They bring out solid beers which do not have high complexity. Given time this will assist in developing more complex beers. I’ll be better equipped to judge beers too; which is an eventual goal and thanks to my Brew Fraternity is within my arms reach.
Next on the agenda is a collection of some good seasonals and old favorite. I’ll be brewing another batch of the English Brown Ale i did earlier in the year, Orangecicle beer (vanilla, orange cream stout), Mocktober Fest (Oktoberfest ale), and a pumpkin spice beer. To be honest the new girl in my life loves pumpkin and nothing says woo that girl like a custom beer to her liking 😉
